Lime leaves are the leaves of the lime tree. They are very similar to that of kaffir lime leaf in that it is generally used in Thai, Cambodian and Indonesian food recipes. Lime leaves can also be used to make tea and wine. Lime leaves provide a nice, fresh citrus flavor to the dishes they are included in.

Can you eat lime leaves?

Most commonly, fresh, whole lime leaves are added to flavor dishes like curries and soups, similar to how bay leaves are used. But they can also be sliced very thinly and added raw to salads and other fresh dishes.
